John Carmean’s Port Wine Cranberry Sauce

Three 1-by-3-inch strips of orange zest, cut into thin matchsticks
1/2 cup fresh orange juice
1/2 cup ruby port
12 ounces fresh cranberries
3/4 cup brown sugar

In a saucepan, combine ruby port with orange juice and orange zest.
Bring mixture to a boil.
Add the cranberries and the brown sugar.
Stir often while mixture simmers over moderately low heat.
Sauce will thicken and be ready, around 25 minutes.
Serve warm or at room temperature.

You can also make this ahead and refrigerate.
